Mom’s Caesar Sauce Recipe

Hey there!

Sorry I have been so delayed in posting lately. It has been a crazy few weeks between work, dog training classes, studying for a major exam, and a work conference! However, I hope to make it up to you by posting one of my all time favourite recipes. This is my Mom’s amazing, super easy, Caesar salad dressing. Any time someone tries this dressing, I get asked what’s in it, and then I get asked for the recipe. But beware – because once you try this dressing, the bottled Caesar sauce from the store won’t cut it anymore!

The evening I was taking the photos for this post, I decided to serve the Caesar salad with some pasta. I love the fresh pasta and sauces at the grocery store as a quick and easy supper idea. Just heat up the sauce, add some ingredients if you’re so inclined (maybe some chicken or seafood), season as you wish (basil, oregano, red pepper flakes…), and cook the fresh pasta for a few minutes. Then you’re in business! You can have supper on the table in about 15 minutes if you’re not adding any protein to your sauce. These photos feature a cheesy stuffed pasta and a rosé sauce. I believe I added garlic and some seasoning to the sauce and made some cheesy garlic bread to serve on the side. image3(2)

Here is what you will need for the Caesar sauce:

  • 1 Cup mayo (real mayo, please!)
  • 1/4 Cup milk
  • 2 Tbsp dijon mustard
  • 2 Tbsp lemon juice
  • Minced garlic to taste (I use 1 1/2 tsp. or about 3 cloves)
  • About 1/4 Cup parmesan cheese (I usually use more to thicken the sauce)
  • Freshly ground black pepper

Mix together all ingredients. You can add milk to thin the sauce out if needed, or add mayo or parmesan to thicken the sauce.

Before serving, assemble the salad – washed lettuce ripped into bite sized bits and dried with paper towel (I always use Romaine lettuce), croutons (homemade with stale bread or store bought), and bacon bits (if desired). Then dress the salad with the sauce, toss, and serve!

This sauce has been a favourite of mine since I was a little girl, and I hope it makes its way into your recipe box as well! It is great with an Italian dinner, or as a side for a summer BBQ. You can even use the sauce mixed with some lettuce and shredded chicken as a chicken Caesar wrap to eat as a lunch or on the go.
